Service summary

An independent review of an existing hazard analysis and critical control point system against agreed criteria. The audit examines how product and process hazards are translated into validated controls and day-to-day monitoring.

The assessment gives management evidence of implementation strengths and weaknesses. It does not develop the HACCP plan, validate controls on the operator’s behalf or guarantee that every product is safe.

Methodology

The existing HACCP study is tested against process observations and sampled operating records, using applicable Codex and agreed sector criteria.

• Define products, processes, HACCP criteria and audit boundaries.
• Review product descriptions, flow diagrams and hazard analysis records.
• Confirm selected process flows and prerequisite control interfaces on site.
• Examine critical controls, validation evidence and monitoring arrangements.
• Trace deviations through product disposition and corrective action records.
• Evaluate verification, reassessment and food safety team oversight.
• Report evidence-based findings without prescribing the HACCP solution.
