Programme Summary
Control temperature sensitive food through receiving, storage, transport and delivery. Participants select monitoring arrangements, interpret temperature records and evaluate deviations against approved product limits and exposure evidence. A practical distribution case connects equipment performance, loading practices and handover responsibilities, enabling teams to protect product safety, preserve traceability and make consistent escalation and containment decisions.
Training Objectives
1 Connect cold chain controls with product safety risks; 2 Improve temperature monitoring and equipment verification; 3 Strengthen receiving storage and transport coordination; 4 Develop consistent deviation and containment decisions; 5 Support reliable records and continuous cold chain performance.
Learning Outcomes
1 Map temperature risks across a distribution route; 2 Select suitable monitoring locations and records; 3 Interpret temperature profiles against approved limits; 4 Define containment and escalation for an excursion; 5 Prepare a practical cold chain improvement plan.
Target Audience
Cold Store Managers; Transport Supervisors; Warehouse Supervisors; Food Quality Officers; Distribution Managers; Receiving Supervisors.
Target Industries
Chilled Food Distribution; Frozen Food Warehousing; Dairy Distribution; Fresh Produce Logistics; Food Retail.
Course Contents
- Module 1 Product Risks and Cold Chain Scope: Temperature sensitive hazards and product categories; Approved limits and shelf life assumptions; Process boundaries and custody responsibilities.
- Module 2 Receiving and Delivery Acceptance: Vehicle condition and delivery documentation; Product temperature checks and instrument hygiene; Acceptance rejection and escalation decisions.
- Module 3 Storage Conditions and Equipment: Airflow loading and product segregation; Temperature mapping and alarm placement; Defrost cycles breakdowns and maintenance interfaces.
- Module 4 Measurement and Monitoring Systems: Probe logger and sensor suitability; Calibration checks and measurement uncertainty; Sampling frequency and data integrity.
- Module 5 Loading Transport and Handover: Precooling load arrangement and door opening; Transit controls and last mile delivery; Clear handover records and acceptance responsibilities.
- Module 6 Excursions and Product Decisions: Evaluate time temperature and product evidence; Hold affected stock and protect traceability; Authorised disposition and documented rationale.
- Module 7 Verification and Contingency Planning: Trend alarms excursions and recurring causes; Alternative storage and breakdown response; Review routes equipment and seasonal changes.
- Module 8 Cold Chain Case Exercise: Interpret a fictional temperature profile; Trace affected products and exposure periods; Recommend containment and improvement actions.
Assessment
- 40 single best answer questions, including applied scenarios; one mark per question.
- 60 minute invigilated digital examination with identity verification. Approved accessibility adjustments preserve the assessed competence.
- Supplied reference sheets permitted; messaging, internet searches and external AI assistance prohibited.
- Individual applied assessment (30 minutes): Evaluate a cold chain excursion using supplied product limits and logger records; identify affected stock, justify containment and propose monitoring and contingency improvements.
- Assessment criteria: Correct interpretation of temperature and product evidence; Traceable and proportionate containment decisions; Feasible monitoring and contingency improvements.
- Pass each component separately: 30/40 written marks (75%) and at least 70% on the applied task.
- All mandatory criteria must pass: Do not release temperature affected food without sufficient authorised safety justification.
- Individual results and feedback are provided. One reassessment may follow coaching under the published enrolment terms.
Certification
- Successful learners receive a TQCSI Arabia digital Certificate of Successful Completion.
- The certificate records the learner name, exact programme title, teaching hours, completion date and unique verification reference.
- Verified identity, full attendance and separate written and applied passes are required; all mandatory critical criteria must be met.
- Proposed issue target: within 30 calendar days of approved results and settlement of applicable fees.
- Records assessed food safety course learning; workplace responsibilities remain subject to employer approval and applicable requirements.
- Attendance confirmation may record completed hours for unsuccessful learners; it does not certify successful completion.
