Programme Summary

Develop a defensible approach to establishing and reviewing food shelf life. Participants evaluate product formulation, processing, packaging, distribution and foreseeable use, then select suitable study evidence and acceptance criteria. Practical case work builds a shelf life study brief and review decision, helping technical teams distinguish quality deterioration from safety risk and recognise when specialist microbiological support is necessary.

02

Training Objectives

1 Connect shelf life decisions with product safety evidence; 2 Improve identification of influencing product and process factors; 3 Strengthen study planning and acceptance criteria; 4 Develop critical interpretation of results and limitations; 5 Support justified date marking and reassessment decisions.

03

Learning Outcomes

1 Identify factors influencing a product shelf life; 2 Define relevant safety and quality study endpoints; 3 Prepare a proportionate shelf life validation brief; 4 Interpret study evidence and uncertainty limitations; 5 Recommend date marking and reassessment conditions.

04

Target Audience

Product Development Technologists; Food Safety Managers; Quality Managers; Food Microbiologists; Regulatory Affairs Officers; Technical Managers.

05

Target Industries

Chilled Food Manufacturing; Dairy Processing; Beverage Production; Food Ingredient Manufacturing; Packaged Food Production.

Course Contents

  • Module 1 Shelf Life Purpose and Responsibilities: Safety quality and foreseeable use distinctions; Use by and best before concepts; Business accountability and market requirements.
  • Module 2 Product Process and Packaging Factors: Formulation pH water activity and preservatives; Processing hygiene and contamination risks; Packaging integrity atmosphere and product interactions.
  • Module 3 Distribution Storage and Consumer Conditions: Temperature profiles and reasonably foreseeable handling; Opened life and preparation conditions; Vulnerable consumers and use limitations.
  • Module 4 Study Design and Acceptance Criteria: Representative batches and worst case assumptions; Sampling times endpoints and acceptance limits; Laboratory competence and method suitability.
  • Module 5 Evidence and Specialist Methods: Durability studies and relevant scientific literature; Challenge testing and predictive model boundaries; Specialist design and interpretation responsibilities.
  • Module 6 Data Interpretation and Uncertainty: Evaluate trends variation and incomplete evidence; Safety versus sensory quality endpoints; Document assumptions and justified conservative decisions.
  • Module 7 Implementation Verification and Changes: Link findings to labels and storage instructions; Monitor ongoing product and process consistency; Triggers for review and revalidation.
  • Module 8 Shelf Life Validation Case: Prepare a study brief for a product; Assess supplied results and evidence gaps; Recommend a justified review and release pathway.
07

Assessment

  • 40 single best answer questions, including applied scenarios; one mark per question.
  • 60 minute invigilated digital examination with identity verification. Approved accessibility adjustments preserve the assessed competence.
  • Supplied reference sheets permitted; messaging, internet searches and external AI assistance prohibited.
  • Individual applied assessment (30 minutes): Prepare a shelf life study brief and assess supplied results for a fictional food product; state acceptance criteria, limitations, further evidence needs and review triggers.
  • Assessment criteria: Relevant product risk factors and study conditions; Suitable evidence endpoints and acceptance criteria; Transparent justified conclusions and reassessment needs.
  • Pass each component separately: 30/40 written marks (75%) and at least 70% on the applied task.
  • All mandatory criteria must pass: Do not justify a safety based shelf life using sensory results alone.
  • Individual results and feedback are provided. One reassessment may follow coaching under the published enrolment terms.
08

Certification

  • Successful learners receive a TQCSI Arabia digital Certificate of Successful Completion.
  • The certificate records the learner name, exact programme title, teaching hours, completion date and unique verification reference.
  • Verified identity, full attendance and separate written and applied passes are required; all mandatory critical criteria must be met.
  • Proposed issue target: within 30 calendar days of approved results and settlement of applicable fees.
  • Records assessed food safety course learning; workplace responsibilities remain subject to employer approval and applicable requirements.
  • Attendance confirmation may record completed hours for unsuccessful learners; it does not certify successful completion.
